Wine Review: This bright and playful traditional method bubbly from Sonoma County is straw colored with streams of small bubbles in the glass. There are aromas of a crusty sourdough boule, green apple, lemon-lime, and chalk dust. Quite foamy in the mouth, it has a medium-minus body with medium-plus acidity. It is crisp, dry, balanced and clean. There are flavors of lemon-lime, green apple, chalky minerality and sourdough bread with a note of grapefruit pith. The finish is dry, refreshing, and lingers a bit. This would be nice to use in a spritz cocktail or with some takeout sushi rolls. – Mark
Winemaker Notes: Piper Sonoma Blanc de Blancs is a beautiful pale straw color in the glass with tiny bubbles. You are greeted with aromas of green apple, citrus and white flowers. The palate is crisp and dry with a long mouthwatering finish.
