Wine Review: This very dark ruby colored Cabernet Sauvignon from Alexander Valley opens with a fragrant black currant bouquet with hints of pencil shavings and blueberry. On the palate, this wine is medium bodied, velvety and balanced. The flavor profile is a mineral and black currant blend with notes of spice and oak. We also detected a hint of black tea. The finish is dry and its moderate tannins build up and linger. We found this wine needs some air to open up its fruit. So you can decant it in the near term. We suggest pairing it with braised short ribs. Enjoy - KWGTP
