Wine Review: This very dark ruby colored Cabernet Sauvignon from Priest Ranch opens with a blackberry and black olive bouquet with hints of black licorice. On the palate, this wine is full bodied with medium plus acidity. The mouthfeel is balanced, round and fresh. The flavor profile is ripe blackberry and black licorice blend with notes of stony minerality and black cherry. I also detected hints of dark chocolate, cinnamon, and cedar. The finish is dry and its fruit flavors, acidity, and its dusty moderate tannins linger and last for while. I would pair this Cabernet Sauvignon with marinated grilled steak tips. Enjoy - Ken
