Wine Review: This years offering from Quintessa is for readers who prefer elegant high end Cabs. It is opaque and very dark purple colored. It opens with a mild black cherry bouquet with a hint of menthol and boysenberry. On the palate, this wine is medium to full bodied, very well balanced, smooth, and silky. The flavor profile is a delicious black cherry and gentle black currant blend. There was also a touch of black pepper mixed in as well. The finish is dry and its very refined tannins are moderately noticeable, yet linger for quite sometime. This classy Cab blend would pair very well with a filet mignon or braised Colorado lamb chops. Winemaker Notes: Quintessa 2007 opens to rich, complex aromas of dark black currant fruit with undertones of raspberry, licorice and spice. On the palate, the wine delivers what the nose promises—power and refinement with a melange of complex cassis, blackberry, mocha and sandalwood spice flavors. A broad, rich middle palate and a long finish offer a delicate balance of intensity and elegance, full fruit and supple tannins.
