Wine Review: This deep dark ruby colored Cabernet Sauvignon opens with a black currant and blackberry jam bouquet with hints of black cherry, vanilla, & blueberry. On the palate, this wine is medium bodied with nicely integrated acidity. The mouthfeel is silky smooth and very well-balanced. The flavor profile is a tasty black currant and cocoa blend with notes fine chalky minerality and black plum. I also detected hints of oak, birch beer, and black cherry. The finish is dry, and its well-managed dusty tannins linger and last for quite some time. This elegant Cab would pair well with filet mignon drizzled with a red wine, garlic and mustard sauce, sherry button mushrooms and mashed potatoes with crisp French beans. Winemaker Notes: Dense and concentrated aromas of ripe black fruits, espresso and sweet vanilla anchor dominate, with additional notes of dried underbrush and leather. The focused, supple entry strikes a balance between fresh blue-black fruits and savory minerality. Powerful yet poised, its density lends itself to a long and lasting finish.
