Wine Review: This straw-colored Sparkling wine displays lots of medium-sized streaming bubbles. It opens with a fresh baked bread, green apple and green tea bouquet with a hint of lemon. On the palate, this wine is light plus bodied, frothy and delicate. The flavors however are very expressive featuring a nutty mineral blend with notes of green apple and almond. I also detected notes of apricot and white pepper along with a hint of ginger. The finish is dry and its flavors and acidity linger and last for a while. We would pair this sparkler with oysters on the half shell. Enjoy – Ken & Joe
