Wine Review: This midnight purple colored Cabernet Sauvignon from Sequoia Grove opens with a ripe blackberry and moist pipe tobacco bouquet with hints of black cherry, espresso, cedar, and chocolate. On the palate, this wine is full bodied with plus acidity. The mouthfeel is balanced, round, robust, and bright. The flavor profile is a stewed black plum and graphite blend with notes of black cherry, tobacco, and black olive. We also detected hints of espresso, chocolate, and oak. The finish is dry, and its flavors, acidity, and well-managed dusty tannins are nicely sustained. We would pair this impressive Cab with braised short ribs or with a charred butterflied leg of lamb.
