Wine Review: This dark ruby colored Cabernet Sauvignon from Seven Hills opens with a fragrant red currant and pomegranate bouquet with hints of black cherry. We also detected hints of violets and toasted vanilla oak. On the palate, this wine is full bodied, balanced and savory. The flavor profile is a graphite influenced black cherry with notes of oolong tea, black raspberry, and toasted oak with some herbal hints mixed in. The finish is dry and its flavors and refined tannins linger and last or a while. The Panel suggested pairing this Cab with a beef wellington or veal Milanese. Enjoy – KWGTP
