Wine Review: This opaque and very dark purple colored Cabernet from Shafer is consistently a high quality wine each and every year. The 2008 opens with a black currant bouquet with a hint of pine. On the palate, this wine is full bodied, very well balanced, and ultra-smooth. The flavor profile is a very tasty black cherry with notes of plum, chocolate and a hint of old oak. The finish is dry and its dusty tannins last for a very long time. The panel really enjoyed this Cab and would suggest pairing it with a ribeye steak or a rack of lamb seasoned with rosemary. Enjoy – KWGTP

Winemaker Notes: Perfumy aromatic elegance leads to rich, focused flavors of blackberry, black cherry, dark chocolate, cola, cassis, juicy black and red cherry, black tea, with spice and warm toast. Ripe, silken tannins result in a pleasing, lengthy finish, smooth texture, and a refined structure which offers the potential for very long term aging.
