Wine Review: This this pitch-black colored Cabernet Sauvignon from Silenus opens with a black currant bouquet with hints of boysenberry and red cherry. On the palate, this wine is medium bodied with nicely integrated medium acidity. The mouthfeel is round, soft, and juicy/ The flavor profile is a black currant and red plum blend with notes of strawberry and cedar. I also detected hints of sautéed red bell pepper, faint minerality and red raspberry tea. The finish is dry, and its dusty tannins stick around for a little while. This Cab would pair well with a New York strip steak. Enjoy - Ken

Winemaker Notes: This wine has a dark, inky, rich, ruby red color. The intense aromatics of this wine showcase flavors of juicy currants and black cherries followed by delicate notes of baking spices. The palate leads with flavors of perfectly ripened black mission fig, black berries, and pleasant secondary tones of toasty oak lingering on the finish. This is a big and bold full-bodied wine; it pairs perfectly with a filet mignon or your choice cut of steak.
