Wine Review: This light straw colored American Sparkler is one of the lighter and more, easy drinking sparkling wines of this lineup. The smaller bubbles give way to toast with apricot marmalade, golden delicious apples, and a slightly under ripe Anjou pear. The finish is a bit on the shorter side but isn't as tart as others giving it a pleasant fruity finish. This Sparkler would pair nicely with bacon wrapped scallops. - Nicolay

Winemaker Notes: Evolution Brut Sparkling comes across as dry due to the bubbles and acidity in the finished wine, making a vibrant wine that dances on the palate. This sparkling wine expresses aromatics of apricot, green apple, Bosc pear, with hints of white peach and citrus and a slightly creamy mouth feel. Dry on the pallet, it finishes crisp and clean.
