Wine Review: This very dark garnet colored Cabernet Sauvignon based blend from Spring Valley Vineyard in Washington state opens with a ripe black cherry and black licorice bouquet with hints of cedar, pipe tobacco, and dried strawberries. On the palate, this wine is medium bodied with integrated medium acidity. The mouthfeel is balanced, smooth, and very approachable. The flavor profile is a ripe black cherry and stone dust blend with notes of black licorice and sage. I also detected hints of blackberry and black pepper. The finish is dry, and its flavors, acidity, and refined moderate dusty tannins are nicely sustained. This wine has developed nicely so far. I would pair this red blend with filet mignon over the next year or so. Enjoy - Ken
