Wine Review: This midnight purple colored Cabernet Sauvignon from Spring Mountain opens with a fragrant ripe blackberry and black currant bouquet. On the palate, this wine is medium bodied, smooth, balanced and soft. The flavor profile is a ripe blackberry and black plum blend with notes of fine graphite, black tea and oak. I also detected hints of black currant, black pepper and a touch of Sambuca at the very end. The finish is dry and its big and bold dusty tannins stick around for quite a while. This Cab benefits from some decanting. It also calls to be paired with a well-marbled ribeye steak. Enjoy - Ken
