Wine Review: This translucent and dark red colored Cabernet Sauvignon from Textbook opens with a cranberry and pomegranate bouquet with hints of dried oak leaves. On the palate, this wine is medium bodied with integrated medium plus acidity. The mouthfeel is balanced, round, and fresh. The flavor profile is a tart red plum and pomegranate blend with notes of oolong tea and red raspberry. The finish is dry, and its flavors, acidity, and moderate dusty tannins build-up a bit and linger. We would pair this Cab with grilled Italian sweet sausages. Enjoy - Ken & Mark
Winemaker Notes: On the nose, there are lovely aromas of Satsuma plum, Black cherry, and subtle graphite from Paso Robles’ mineral-rich soils. On the palate, I get the flavors of ripe red cherry, mixed berry pie, and Tahitian vanilla. The finish is smooth with well-integrated tannins. It’s opulent, richly textured, and beautifully balanced. The result is richness yet restraint - allowing this Cabernet to be paired with an array of cuisines or simply enjoyed on its own.
