Wine Review: This midnight purple colored Cabernet Sauvignon based blend from The Paring is a very good value. It opens with a blueberry, black cherry, and gentle oak bouquet. On the palate, this wine is medium bodied with medium acidity that is nicely integrated. The mouthfeel is rounded, and the fruit is juicy. The flavor is a black raspberry and black plum blend with notes of minerality. I also detected hints of black currant and cedar plank towards the end. The tannins are very reflective of the vintage. Substantial and sticky. They linger for quite some time. As a result, this wine still calls for a well-marbled piece of meat. I would pair it with a dry-aged ribeye steak. Enjoy - Ken

Winemaker Notes: Utterly fascinating nose mixing lifted black fruit, savory green herbs and dark notes of grilled bread, espresso and anise. Fills the palate with bright red fruit and black plum. A constant play between sweet and savory. Gentle and dusty tannins lead the way into an incredibly long and precise finish. Mulberry sweetness and a wonderful tension between tannic structure and bright acidity. Balanced and refined, a study in elegance.
