Wine Review: This dry Virginia sparkler is a golden yellow color with many streams of fine bubbles. The bouquet includes croissant, toasted almond, green apple, and a touch of flint. It's nicely frothy in the mouth, and with plus acidity and a medium body. It is fresh, lively and balanced. The lightly creamy mouthfeel makes it elegant as it presents flavors of green apple, red raspberry, wet slate, lime zest, with notes of toasted almond and pastry. The crisp finish persists for a long time. Go old school and serve chilled with Coquilles Saint-Jacques. - Mark
