Wine Review: This opaque and very dark red colored Cabernet Sauvignon from Vinum opens with a pomegranate, new saddle leather and Spanish cedar box bouquet. On the palate, this wine is medium bodied, balanced and has a round mouthfeel. The flavor profile is a red currant and cranberry blend with notes of cinnamon, cedar and hints of gritty minerality and Good n' Plenty. The finish is dry and its chewy tannins build-up and linger for quite some time. If you decant this wine, the tannins become more tamed. I would pair this Cab with a flat iron steak with a red wine sauce. Paired with red beets and mashed potatoes. Enjoy - Ken
