Wine Review: This opaque and dark garnet colored Cabernet Sauvignon from William Cole opens with a mild boysenberry and fig bouquet with hints of cherry, saddle leather, nutmeg, and pencil lead. On the palate, this wine is full bodied with medium plus acidity. The mouthfeel is round, seamless, robust, and dense. The flavor profile is a graphite and cassis blend with notes of tobacco and pomegranate. We also detected hints of black tea and oak. The finish is dry, and its flavors, acidity, and its bold tannins build-up and are very nicely sustained. This Cab can live in the cellars for many years. If you must try it in the near term, decant it for quite some time, and then pair it with your favorite cowboy cut steak. Enjoy - KWGTP (Club Members Only Wine)
