Wine Review: This slightly hazy and dark red colored Cabernet Sauvignon based blend from William Cole opens with an attractive and fragrant bouquet featuring cinnamon and black cherry with hints of menthol, lilac, anise, and cardamom. On the palate, this wine is medium plus bodied with medium plus acidity. The mouthfeel is round, drying, rich, and initially a bit tight. The flavor profile is a macerated black cherry and menthol blend with notes of stony minerality and cedar. We also detected hints of blackberry, black pepper, and black licorice. The finish is quite dry, and its flavors, acidity, and its very dusty and chunky tannins build-up and stick around for quite some time. We would decant this intense red blend for a while in the near term before pairing it with a well-marbled ribeye steak. Enjoy - KWGTP
