Wine Review: This dark ruby colored Cabernet Sauvignon from Textbook opens with a black cherry and gentle tobacco bouquet with hints of stony minerality and cassis. On the palate, this wine is medium bodied with medium plus acidity. The mouthfeel is balanced, round, and easy going. The flavor profile is a black cherry and red currant blend with notes of stony minerality and tobacco. I also detected hints of spiced black plum and black tea. The finish is dry, and its flavors, acidity and moderate dusty tannins linger and last for a while. I would pair this very friendly Cab with a juicy bacon and Swiss cheeseburger with sauteed mushrooms. Enjoy – Ken

Aging in French oak deepens our flavor profile, contributing to the tobacco and spice notes. The structure is firm but approachable, providing a fine backbone for the rich fruit.
