Wine Review: This clear and pale white gold colored Brut Champagne from Taittinger displays many streams of small random bubbles. It opens with a shy saline and chalky minerality bouquet with hints of marshmallow, wet slate, and lime pith. On the palate, this wine is medium bodied with medium plus acidity. The mouthfeel is balanced, round, delicate, crisp, and bright. The flavor profile is a saline and brioche blend with notes of dried almond and chalky minerality. We also detected hints of lime zest and pear. The finish is dry, and its flavors and acidity linger nicely. We would pair this versatile Brut Champagne with baked Dover sole. Enjoy - KWGTP
