Wine Review: This clear and light yellow colored Vermentino from Pax opens with a faint yellow grapefruit and almond bouquet with touch of lime. On the palate, this wine is light plus bodied with nicely integrated medium acidity. The mouthfeel is wonderfully balanced super smooth and seamless. The flavor profile is a gentle Anjou pear and lime blend with notes of almond and green apple. I also detected hints of white pepper and a touch of yellow grapefruit towards the very end. The finish is dry, and its flavors and acidity glide away nicely. I would pair this Vermentino with baked halibut. Enjoy - Ken

Winemaker Notes: This vibrant wine opens with lively aromas of Meyer lemon, white peach, and ripe melon, accented by orange blossom and fresh coastal herbs. A subtle saline note and crushed stone minerality give it a distinctly seaside lift. On the palate, it’s crisp and mouthwatering with a sleek, zippy texture and bright natural acidity. Flavors of citrus oil, pear, and green almond carry through to a clean, salty finish.

Winemaker Interview Series – Cole Ballentine of William Cole – Jan 2026

On Wednesday, January 21, 2026, we interviewed Cole Ballentine once again. Cole is the co-winemaker, with his father William Ballentine Jr., at William Cole Winery. We first interviewed Cole when we covered his super-premium Predecessor Estate wines in April of 2025. This time around, we covered six wines from the William Cole winery.
