Wine Review: This very dark ruby colored Cabernet Sauvignon from Ravines in the Finger Lakes opens with a black currant and mild black olive bouquet with hints of faint cedar and menthol. On the palate, this wine is medium plus bodied with integrated medium plus acidity. The mouthfeel is balanced, round, seamless, and savory. The flavor profile is a black cherry and tobacco blend with notes of stony minerality and cassis. I also detected hints of black licorice, cola, and clove. The finish is dry, and its flavors, acidity. and its fine-grained dusty tannins linger and last for a while. I would pair this very good Finger Lakes red blend with a grilled hanger steak.
