Wine Review: This hazy and medium purple colored Syrah from Pax opens with a mulberry and fennel bouquet with hints of cola, black pepper, chocolate, and book leather. On the palate, this wine is full bodied with integrated medium plus acidity. The mouthfeel is balanced, round, concentrated, and rich. The flavor profile is a blend of Australian black licorice and cured meat with notes of black olive and stone dust. We also detected hints of loam, black tea, cedar, and menthol. The finish is dry, and its flavors, acidity, and moderate tannins are nicely sustained. We would pair this Old-World styled Syrah with venison bourguignon. Enjoy - KWGTP
Winemaker Notes: Exotic flowers - purple, blue and white are the first thing you notice before the monstrous purple and blue wave of fruit sweeps in with smoked meat, camphor, and spicy mountain herbs. The palate is impressive for its richness and density, but the length, persistence, freshness, and finesse are what sells it. The muscular build and lack of fat, give this wine a very regal Northern Rhone personality. This wine will be youthfully delicious on release and improve in your cellar for many years to come.
