Wine Review: This clear and maraschino cherry red colored dry Rosé of Cabernet Franc from Apollo's Praise opens with a ruby grapefruit and nectarine bouquet with hints of lemon zest and peas. On the palate, this wine is medium bodied with integrated plus acidity. The mouthfeel is balanced, smooth, and a little zesty. The flavor profile is a stony minerality and watermelon hard candy blend with notes of pink grapefruit and maraschino cherry. I also detected hints of lime zest and tangerine. The finish is dry, and its flavors and acidity display nice length. I would pair this Dry Rosé with prosciutto e melone. (prosciutto and melon) Enjoy - Ken

Winemaker Notes: This Rosé is equal parts generous and serious. Aromas of pomegranate, raspberry, and tomato jump out immediately, and lead to a densely structured midpalate. Dare we say slightly tannic? That is enrobed with generous berry and grapefruit flavors. A burst of apricot leads to a long finish that could be called mineral, but we would also (positively!) call slightly bitter. These contrasts make for a wine that is excellent with food or on its own; it keeps drawing you back for more.

On Wednesday, January 21, 2026, we interviewed Cole Ballentine once again. Cole is the co-winemaker, with his father William Ballentine Jr., at William Cole Winery.
