Wine Review: This clear and pale ruby colored Pinot Noir from Davis Bynum opens with a mild teaberry gum and red cherry bouquet with hints of red licorice and lingonberry. On the palate, this wine is medium plus bodied with integrated medium plus acidity. The mouthfeel is balanced, round, delicate, and very approachable. The flavor profile is a spiced red plum and light cherry-cola cherry blend with notes of cinnamon and loam. I also detected hints of oak, orange zest, and lingonberry. The finish is dry, and its flavors, acidity, and fine tannins drift away nicely. I would pair this versatile Pinot Noir with beef carpaccio. Enjoy - Ken
Winemaker Notes: Red plum, raspberry jam, toffee, and dusty baking spice show a great balance between fruit and savory notes. The mouthfeel is rich, with good acidity, while the flavors show darker fruit like plum compote, forest floor and a lingering spiciness. The fruit and savory notes in this wine along with the acidity and slight tannins make this a very versatile pairing for many different dishes. While it can be enjoyed with anything, we recommend beef bourguignon with bacon and mushrooms.
