Wine Review: This clear and glimmering light-yellow colored Chenin Blanc from Pax opens with a poached pear and key lime bouquet with hints of quince, light honey, pineapple, and lemon sorbet. On the palate, this wine is medium bodied with plus acidity. The mouthfeel is smooth, fresh, and mouthwatering. The flavor profile is a lemon verbena and ginger tea blend with notes of lime zest. We also detected hints of white peach and quince. The finish is dry, and its flavors and acidity linger and last for quite a while. We would pair this Chenin Blanc with a scallop crudo with lime or with a crab stuffed halibut Enjoy - KWGTP

Winemaker Notes: Deep vibrant aromas of quince, golden apple, and white peach, layered with citrus blossom and a hint of honeycomb. Winemaker Interview Series – Cole Ballentine of William Cole – Jan 2026

On Wednesday, January 21, 2026, we interviewed Cole Ballentine once again. Cole is the co-winemaker, with his father William Ballentine Jr., at William Cole Winery.
