Wine Review: This hazy and dark ruby colored Cabernet Sauvignon from Serres Ranch opens with a black licorice and black currant bouquet with hints of blackberry, prune, and cedar. On the palate, this wine is medium plus bodied with integrated medium acidity. The mouthfeel is balanced, round, and savory. The flavor profile is a licorice and blackberry blend with notes of cedar and tobacco. We also detected hints of triple sec, dried cherry, and black tea. The finish is dry, and its flavors, acidity, and moderate tannins drift away with a touch of heat. This wine benefits greatly from some aeration. We would decant this Cab for quite a while, before pairing it with a bison burger or with venison stew. Enjoy - KWGTP

Winemaker Notes: A big, bold Cabernet to represent strong impressionable character throughout our lineage. Aged for over two years in French oak barrels with eight months of bâtonnage, this vintage reveals an earthy depth and layered complexity. Aromas of wild blackberry preserves, ripe plum, and mint lead into flavors of nutmeg, sarsaparilla, and tart black cherries. The palate is rich yet balanced, framed by bright acidity and moderate tannins that provide structure and a long, elegant finish. Pair with braised lamb shanks, hearty pasta dishes, or a perfectly grilled ribeye steak.
