Wine Review: This pitch-black colored Cabernet Sauvignon from Lasseter opens with a shy black licorice and blackberry bouquet with hints of violet, dark chocolate, and wet clay. On the palate, this wine is full bodied with integrated medium plus acidity. The mouthfeel is nicely balanced, very smooth, polished, and structured. The flavor profile is a very tasty chocolate cake and black raspberry blend with notes of graphite and sarsaparilla. We also detected hints of black plum, oak, black tea, and black pepper. The finish is dry, and its flavors, acidity, and well-managed moderate tannins are nicely sustained. We would pair this Cab with Stuart's steak treats or with short ribs with mashed potatoes.
