Wine Review: This clear and deep yellow colored Blanc de Blancs from Ravines in the Finger Lakes displays random tiny bubbles. It opens with a bread dough and lime zest bouquet with hints of almond and green apple. On the palate, this wine is full bodied with medium plus acidity. The mouthfeel is balanced, round, and zesty. The flavor profile is a tasty bread dough and chalky minerality blend with notes of lime zest and lemon verbena. I also detected hints of zesty ginger, white pepper, and almond. The finish is dry, and its flavors and acidity linger and last for a while. I would pair this Sparkling Wine with seared sea scallops with a lime-ginger sauce. Enjoy - Ken
