Wine Review: This clear and medium straw colored Sauvignon Blanc based blend from Quintessa opens with an inviting lemon-lime and passionfruit bouquet with hints of grapefruit zest, ginger, and jasmine. the palate, this wine is medium bodied with medium plus acidity. The mouthfeel is balanced, round, and a bit zesty. The flavor profile is a white grapefruit and lime zest blend with notes of white pepper and ginger. We also detected hints of pear, chalky minerality, and white peach. The finish is dry, and its flavors and acidity linger and last for a very long time. We would pair this very flavorful Sauvignon Blanc with Chilean sea bass and or with oysters. Enjoy - KWGTP
Winemaker Notes: The 2025 Illumination holds true to its name. Fresh and expressive, this is a wine filled with energy. The vibrant acidity captures the brightness of the season. We ferment with native yeast in a variety of vessels to coax different expressions in the wine. French oak barrels, both new and neutral, adds depth and a hint of oak spice. Acacia barrels provide complex floral notes. To preserve the pure fruit flavors, we utilize stainless steel barrels. Ceramic amphora capture freshness. The egg-shaped concrete fermenters offer minerality and richness om the palate.
