Wine Review: This clear and white gold colored "Brut" Sparkling Wine from Emmolo displays medium to small streaming bubbles. It opens with a bread dough and lemon verbena bouquet with hints of white tea. On the palate, this wine is light bodied with integrated medium plus acidity. The mouthfeel is delicate, zesty, and fresh with pleasant medium froth. The flavor profile is a stony minerality, almond, and quince blend with notes of green tea and green apple. I also detected hints of white pepper and saline. The finish is dry, and its flavors and acidity linger and last for a long time. I would pair this sparkling wine with oysters on the half shell. Winemaker Notes: Nose: A delicate mix of scents, with hints of pear, almond biscotti, dried apricot, vanilla bean, flower blossom and tangerine.
Palate: Fresh, lean entry, with flavors of apricot and kumquat that continue to the finish. Soft bubbles enhance this wine's freshness.
Differentiator: A prolonged en tirage for 38 months gives this wine creaminess and depth. Extremely fine bubbles provide elegance.
