Wine Review: This medium purple colored Cabernet Sauvignon Noir from Mollydooker opens with a black cherry and dark chocolate bouquet with hints of violets, black olive, and spearmint. On the palate, this wine is medium bodied with medium acidity. The mouthfeel is balanced, round, velvety, and easy to drink. The flavor profile is a black cherry and red licorice blend with notes of cinnamon tea and clove. We also detected hints of oak, nutmeg, and cedar. The finish is dry, and its flavors, acidity, and friendly mild tannins fade away nicely. We would pair this Cabernet Sauvignon with your favorite carnitas burrito or with a tangy pulled pork platter. Winemaker Notes: The Maitre D' was named after Sparky, who put himself through winemaking college as a left-handed waiter. The 2023 Maître D' Cabernet is a wine with deep red and purple hues and a rich aroma. It’s complex and flavorful, with cherry and blackberry notes transitioning into hints of licorice, cigar box, and mocha, all while maintaining fruit sweetness. This Cabernet is a well-balanced delight. The grapes were grown on the Coppermine Road, Long Gully Road, Ryan Road, and Gateway vineyards in McLaren Vale, and the Joppich vineyard in Langhorne Creek. Barrel fermented and matured in 86% American and 14% French oak, using 33% new, 57% one year old and 10% two-year-old barrels. The required Marquis Fruit Weight™ for the Lefty Series is 65% - 75%. The Actual Fruit Weight for 2022 The Maitre D' is 67%.

On Thursday, May 28, 2026, we had the opportunity to interview Jeff Gaffner again. Jeff is the winemaker and owner of Saxon Brown Wines. During the interview, we covered four single-vineyard 2023 Chardonnays, three Pinot Noirs, a cuvee, and two single-vineyard offerings, also from the 2023 vintage.
