Wine Review: This straw-colored Cava is a very good value. It opens with an impressive abundance of random medium sized bubbles. It opens with a bouquet featuring mild bread dough and green apple. On the palate, this wine is light bodied with medium acidity. The mouthfeel is balanced, round and bright. While the acidity lingers, the bubble effect disappears quickly. The flavor profile is a bread dough, lemon, and green apple blend with notes of ginger and white pepper. The finish is quite dry and refreshing. This Cava would pair well with bacon wrapped scallops. Winemaker Notes: Pale yellow. Fine bubbles forming a constant rosary and persistent crown.
Very fresh aroma of white fruit (tart apple and pear) on notes of citric rind and white flowers. Spicy bouquet due to ageing (cinnamon) and biscuits.
A structured Cava on the palate, well balanced acidity that tenses the whole from beginning to finish. The bubble gives a sensation of creaminess, providing volume and softness to the structure bestowed by the acidity and extending the aromas of white fruit and spices that repeat on the palate. Balanced finish that harmonizes its acidity, leaving behind a sensation of freshness and volume due to its slight content in sugars.
