Wine Review: Retrospective Tasting: This dark purple colored Cabernet Sauvignon from DAOU opens with fragrant violet, blackberry, and bell pepper bouquet with a hint of cola. On the palate, this wine is full bodied with medium acidity. The mouthfeel is balanced, round, concentrated, and voluptuous. The flavor profile is a stony minerality, stewed black plum, and blackberry blend with notes of oak. We also detected hints of anise and concord grape. The finish is dry and its tannins build-up and last for a very long time. This wine still needs time. If you can not wait, decant it for well over an hour. It will bring out its best characteristics. Even after decanting, we would drink on its own by the firepit. Enjoy – KWGTP
