Wine Review: This dark ruby colored Cabernet Sauvignon from DAOU opens with a black currant and tobacco bouquet with hints of Worcestershire sauce and black plum. On the palate, this wine is medium bodied with integrated medium plus acidity. The mouthfeel is balanced, round, and bright. The flavor profile is black plum and cedar blend with notes of black currant and graphite. I also detected hints of gentle root beer, oak, and green olive. The finish is dry, and its flavors, acidity, and dusty moderate tannins build-up and linger for quite a while. I would pair this fresh styled Cabernet Sauvignon with a slow-cooked fork tender pot roast. Enjoy - Ken
Winemaker Notes: The 2022 DAOU Cabernet Sauvignon exemplifies Paso Robles. The nose is highly perfumed, showing aromas of black cherry, cassis, plum, desert sage, sandalwood and dusty minerality. Secondary aromas reveal notes of cigar box, leather, bay leaf, and black olive. The palate is rich and weighty, offering generous flavors of black raspberry, spicy currant, and blueberry compote with impressions of Bing cherry, boysenberry, fig, and baking spices. Ripe, fine-grained tannins carry into a structured finish with lingering accents of cherry, espresso, and vanilla.
