Wine Review: This newcomer to our sparkling lineup showed well. On the nose, lemon zest, tart apples, and chalk could be detected. On the palate, the finer bubbles gave way to beautiful minerality, Meyer lemons, pears, and the slightest hints of macadamia nuts. The finish could have been longer and could have used a touch more depth as the acidity would have helped extend it a bit more. This is a great seared white fish wine. – Nicolay

Winemaker Notes: Straw-yellow with golden hues. Delightful sparkling with fine and persistent "perlage". Complex and attractive nose with delicate yellow flowers, white-fleshed fruit, bread crust and mineral hints. Multifaceted on the palate with fresh citrus. Both elegant and intense with rich texture and a long dry mineral aftertaste. Excellent as an aperitif. Also recommended with fish and shellfish dishes.
