Wine Review: This slightly opaque and medium purple colored Cabernet Sauvignon opens with a wonderful black currant and mild oak bouquet with hints of black cherry, wintermint, and black licorice. On the palate, this wine is medium bodied with integrated medium plus acidity. The mouthfeel is very nicely balanced, silky smooth, and seamless. The flavor profile is a delicious ripe black currant and crushed stone blend with notes of black tea, extracted blackberry, and black licorice. We also detected hints of oak, blueberry, and dark chocolate in the mix. The finish is dry and its well-managed and polished fine tannins and linger and last for a very very long time. The Tasting Panel would decant this Cab to release it bold fruit flavors. If you open and drink right away, you can pair this Cab with veal chop or a filet mignon. If you decant it for a while, you should order duck. Enjoy – KWGTP

Winemaker Notes: Color: Medium red core, ruby red rim.
Nose: An authoritative varietal stamp. Crème de cassis, fresh blackberries/mulberries. A refreshing note of spearmint. The spice emporium is well represented: toasted cumin/coriander seeds, fresh bay leaf, and turmeric. The complexity derived of both French and American oak apparent. Toasted coconut or chocolate truffles in toasted coconut. Cedar and Dutch cocoa.
Palate: Serious, self-assured. A generous fleshiness persists across the palate. Wild black cherries, cola, sarsaparilla. Sage leaves fried in nut-brown butter over grilled calves' liver. Pistachio terrine. A fine graphite core and cherry succulence. Seamlessly woven tannins. The interplay between the oak, tannins and acid results in an even mouthfeel, a textural sheen. Cranberry acidity and succulence provide a lovely balance. Surprisingly approachable, given the varietal temperament. One to watch, will evolve beautifully over the next two/three decade.
