Wine Review: This midnight purple colored Cabernet Sauvignon from Robert Foley opens with aromas of macerated black cherry and a bouquet of flowers, We also detected some hints of herbs, eucalyptus, and strawberry licorice. On the palate, this wine is full bodied, balanced and smooth. The flavor profile is a black cherry jam and flinty mineral blend with notes of cassis and vanilla oak with a hint of black raspberry. The finish is dry and its moderate tannins build-up and stick around for quite some time. The Panel suggested pairing this Cab with beef bourguignon, a lamb stew or wild mushrooms and venison. Winemaker Notes: Ripe black cherry aromas mingle with the menthol character of the surrounding mountain laurels. Very good natural acidity frame a rich middle with very fine tannins which gently flow across the palate. The finish is deliciously long. This is a beautiful example of one of the most successful Cabernets born in high elevation.
