Wine Review: This opaque and very dark ruby colored Cabernet Sauvignon from Stags’ Leap Winery opens with a mild black currant and oak bouquet with hints of cigar box and dark chocolate. On the palate, this wine is medium plus bodied with medium acidity. The mouthfeel is balanced, smooth, and seamless. The flavor profile is black currant and oak blend with notes of black tea and blackberry. We also detected hints of chalky minerality, oak, clove, mocha, anise, and bay leaf. The finish is dry, and its flavors, acidity, and well-managed tannins have settled nicely and drift away. We would pair this Cab with braised short ribs. Enjoy - KWGTP
Original review 2/22/25 (93.5): This slightly opaque and very dark ruby colored Cabernet Sauvignon from Stags’ Leap opens with a mild black currant and graphite bouquet with hints of oak, thin mint cookies, and cinnamon. On the palate, this wine is medium plus bodied with medium acidity. The mouthfeel is balanced, smooth and dense. The flavor profile is black currant and oak blend with notes of black tea and blackberry. We also detected hints of chalky minerality, pomegranate, oak, and black tea. The finish is dry and its flavors, acidity, and its tannins build-up and stick around for a very long time. The Tasting Panel would decant this Cab for a while before pairing it with cowboy cut prime rib or osso buco. Enjoy - KWGTP
